Cheesy Salsa Baked Potato

Serves 1. 300 Calories.

  • ½ cup cottage cheese
  • 1 small baked potato
  • Taco seasoning, to taste
  • Your favorite salsa
  • Green onion, sliced

Slice your baked potato in half and scoop out the contents, fluffing them up with a fork and mixing in the taco seasoning. Return to the skins and top with the cottage cheese, salsa and green onions.

Rich and Sweet Pear Treat

Serves 1. 200 Calories.

  • ½ cup cottage cheese
  • Ground cinnamon, to taste
  • 1 pear (we use bosc), sliced lengthwise in half, core and seeds removed
  • 2 tsp honey (ideally local)

Lay pear halves face-down on a plate in the microwave. Stab a few times with a fork for steam release through the skin.  Heat for 1 minute or until soft. Remove from microwave and flip them face-up and sprinkle with cinnamon. Pour cottage cheese over the pear halves and drizzle with the honey.

Cheesy Raspberry Toast

Serves 1. 210 Calories.

  • ½ cup cottage cheese, drained
  • 1 slice whole grain bread, toasted
  • 1 tbsp raspberry jam

This cottage cheese recipe couldn’t be easier! On a plate, top the toast with the cottage cheese and then add the jam before you dig in!
