Summer Chowder

  • ½ can white beans, rinsed
  • 1 cup condensed potato chowder
  • ¼ cup fresh corn, cooked and removed from cob
  • ½ cup asparagus, chopped, cooked
  • 1 tbsp chopped bacon (or bacon bits if preferred)

Combine white beans and corn in the condensed soup.  Add water according to soup package directions.  Heat in a small pot. Add asparagus. Serve topped with bacon.

Fresh Corn Cheesy Quesadilla

  • 1 small flour tortilla
  • 1½ slices of part skim mozzarella cheese
  • ¼ cup fresh corn, cooked and removed from cob
  • 1 tbsp reduced fat sour cream
  • Desired amount red onion, minced
  • Desired amount tomato, chopped
  • Desired amount cilantro, chopped
  • Desired amount bottled salsa

Place non-stick pan sprayed lightly with cooking oil over medium heat. Spread out the tortilla and add cheese, corn and onion to one side, topped by tomato and cilantro. Fold in half and add to pan. Grill until desired doneness. Remove from heat and serve topped with sour cream and salsa.
