1. Quick and Easy Huevos

As the veggies are almost done cooking, add two eggs and cover with a lid, allowing the eggs to cook until soft set. Top this with ¼ cup of black beans, minced cilantro, and fresh salsa or pico de gallo.

2. Tex Mex

Another one of the top ways to prepare eggs is to start by sautéing ½ cup of shredded potatoes, along with a finely diced onion and a finely diced red bell pepper and green bell pepper in a teaspoon of oil. Then, add in taco seasoning. Once the vegetables are almost done cooking, add two whisked eggs, along with ¼ cup of diced avocado and minced cilantro. Scramble this until the eggs are soft set. Add it to your plate, and serve with hot sauce.
